Recipe: Frikadeller (Meatballs); Kartofler (Potatoes); and Rødkål (Red Cabbage) from Denmark!

Today's meal is from #Denmark - and there were a few components to it: #Frikadeller (Danish Meatballs); #Kartofler (Danish Potatoes) and #Rødkål (Danish Red Cabbage)! I served it with a nutty/seedy dense brown bread I found at our local market, as that seems most closely aligned with the cuisine, based on what I have read and researched. I will include all three recipes below - make all together or choose the one(s) that most appeal to you. All were delicious (though reviews were mixed at our house on the red cabbage, as it is not a common food in our family, and an aquired taste. I will say this was a great introductory recipe for it as it was soft, sweet and easy to eat.)

Yum, yum, yum - Let's get started!

 

FRIKADELLER ("Danish Meatballs")

Prep: 15 Minutes

Cook: 15 Minutes

Serves: 20 Meatballs (4-6 people)


Ingredients:

  • 1 lb (800 gm) Ground Pork

  • 1/4 cup (59 ml) Milk

  • 2 cups (4.73 dl) Oats

  • 2 cups (4.73 dl) All-Purpose Flour (or Breadcrumbs)

  • 1 Egg

  • 1 large Onion, finely chopped

  • 1 clove Garlic

  • 1/4 tsp (2.5 grams) Nutmeg

  • 1/4 tsp (2.5 grams) Sage Leaves

  • 1/2 tablespoon (7.5 grams) Salt

  • Pepper, to taste

Directions:

  1. Mix all the ingredients (except for the milk) together in a large bowl, using your hands.

  2. Once the other ingredients are well combined, add milk, and mix well.

  3. Use a tablespoon to form small meatballs - each should be a heaping tablespoon size. (Dip spoon in water before each meatball and it will be easier and less sticky.) Press each meatball to flatten them a bit - each should look like a tiny hamburger.

  4. Coat large frying pan with butter or oil, and heat.

  5. Begin frying the meatballs, each for 5-10 minutes depending on how hot you are cooking them.

  6. Flip often, to give each an even, crispy crust.


 

KARTOFLER ("Danish Potatoes")

Total Time: ~30 Minutes

Serves: 4


Ingredients:

  • 2 large Potatoes

  • 1/4 cup (0.5 dl) Butter

  • 1/3 large Onion, sliced

  • 1/3 tablespoon (5 grams) Granulated Sugar

  • 1/3 tablespoon (5 grams) Vinegar

  • 1/3 teaspoon (1.6 grams) Salt

  • Dash of White Pepper

Directions:

  1. Boil the potatoes for 10-15 minutes.

  2. Cool, peel and slice into 1/4 inch thick slices. Set aside.

  3. Melt the butter in a frying pan.

  4. Add the onions and sauté for 5 minutes, stirring occasionally.

  5. Add the potatoes.

  6. Saute for 5 minutes, turning occasionally, or until brown on both sides.

  7. Add the remaining ingredients. Cook for 5 more minutes.

  8. Serve.


 

RØDKÅL ("Danish Red Cabbage")

Prep: 20 Minutes

Cook: 1 Hour

Serves: 4


Ingredients:

  • 2.2 lbs (1 kg) Red Cabbage

  • 3/4 cup (2 dl) Vinegar

  • 2/3 cup (1/5 dl) Currant or Elderberry Juice

  • 5 ounce (150 gram) Sugar

  • 1 tablespoon (17 gram) Salt

Directions:

  1. Finely shred the cabbage and make sure individual pieces are not too long (Note: not a requirement, but a food processor proved helpful for this step.)

  2. Put in large saucepan.

  3. Pour vinegar in sauce pan.

  4. Turn on heat and let simmer for 30 minutes (stir regularly so it doesn't burn to the bottom of the pan.)

  5. Add juice, sugar and salt and let simmer for another 30 minutes (or until desired consistency).
